Day Seventeen: Healthy Fish and Chips?

Today has been a bit frustrating. I’ve not enjoyed work at all, and even ended up leaving early as I wasn’t feeling well. I’ve managed to be good though and stick to the diet, even though I just wanted to eat chocolate and all things bad for me!! Apple again for breakfast, dinner was a bit of a trial – we were in the pub for lunch. It was a weatherspoons, so luckily their menu does have some calorie details. I had Sweet Chilli Noodles with Chicken, which was about 550 calories. I also had soda water for a drink, instead of my normal beer etc. Tea was Healthy Fish and Chips, which was surprisingly nice. and surprisingly low in calories according to the book – only 373! As I’m not feeling well I’m gonna leave it at this, hopefully will do a more engaging blog tomorrow.

Day Seventeen

Healthy Fish and Chips

450g potatoes, peeled and cut into chips

1 tbsp olive oil

2 skinless white fish fillets

Grated zest and juice of 1 lemon

Small handful of fresh flatleaf parsley leaves, chopped

 

Preheat the oven to 180 degrees (200 if it is not a fan assisted). Toss the chips in a tablespoon of oil, spread over a baking tray and bake for 40 minutes until browned and crisp. While they are cooking, put the fish in a shallow dish and brush lightly with oil. Season with salt and pepper, and sprinkle with half the lemon juice and bake for 10 minutes. Remove from the oven, and sprinkle the chopped parsley and lemon zest over the fish. Return to the oven for a further 3-5 minutes, to finish cooking.
